JUST WHAT THE HECK DO YOU EAT???

I opened up my google reader today and this is a list of the links that were waiting for me:

I am a girl who knows what blogs to follow!!!

I follow several Mormon and Mennonite blogs. Those women can sure cook and craft.

You get the picture.....I like food. I like it a lot.

You can LOOK at me and see that I am friends with food! We have been buddies and pals for a long long time. Couple with that my love of cooking and that can spell out trouble.


I think that is why people get this stricken look on their faces when they find out that I am flour/sugar free.

They hold their chest and gasp....*Bbbbbuuuttt WHAT.DO.YOU.EAT???*

The answer is....I eat anything I want....as long as it is sugar and flour free.

In fact, some times I feel like I am eating all the time.

Today for breakfast I had oatmeal (old fashioned) with a tiny bit of butter, sweetener and a few blueberries and toasted pecans.

I am working out of town today so I had thought ahead about where and what I was going to eat. Some places are easier to eat out at than others. Burger King would limit me greatly! However, I can always eat Mexican food.

I also pack snacks so that I would be alright at the office. I usually have some sort of a snack packed. For snack today I have cherries, pistachios, almonds, tomatoes, a large V8 (counts as 2 veggies and 1 point as per WW), broccoli salad and an apple. That does not mean I will eat all of those items. It just means that I am prepared if I do want to eat. ~edited to add: I only ate the cherries, V8, tomatoes and the apple)

Lunch was roast beef tacos with corn tortillas. Came with rice, beans and chips. The tacos were so yummy because I have been eating a lot of chicken and fish. But deep down in my heart I am a Texas girl through and through and I love my beef. ~grins~ I did not eat my rice and beans because I was not hungry for them. I ate maybe 6 chips with salsa. They were good but that was all that I wanted. And there was no flour or sugar in the meal.

I do not count calories. I try to eat CORRECT proportions and lots of veggies and fruits. I eat meat (not lunch meats). I eat eggs and bacon. I eat brown rice. I do not eat much dairy but I sometimes eat cheese (see pic above), cottage cheese and greek yogurt. I eat sweet potatoes (great for your serotonin level!!). I do not keep a food diary. I have before. Me and Weight Watchers and me and First Place....we were tight once upon a time! Those programs WORK. Right now I just have too many things going and I really do know me. So, I am doing what is working for me.

My chlosterol level is 161.

My blood pressure is 109/64.

Then I walked around the block a couple of times this afternoon.


I will have a chicken breast and a big salad for supper. I make my own salad dressing in order to avoid the sugar.


Since starting this I have never felt deprived and honestly, I rarely ever feel hungry! I am losing slow but it is alright with me because it is coming off. I feel good about it.


And HA HA! Did ya notice I did not post the links to all those blog entries??? I was not going to tempt you like that!

  2. Hmmm, it didn't post my last comment. What did I say? Oh yeah, That's great that you don't deprive yourself of foods you like. I am a fan of eating some thing if you want it (maybe really small amounts). Keep up the good work, we are cheering for you.

  6. Mindy,I am glad that you showed more of what you CAN eat, I never thought of Mexican food as being ok but you are right there is no sugar or flour, so the corn chips and tortillas would be ok for you to have...

    You are doing well and slow is how it went on the body so slow is how it comes off!

    That way it will stay off!

  7. Mindy, This chopped salad has been the hit of the summer at my house. We use different cheeses on it. And, don't add the cheese on top until it's on your plate. The leftovers make the cheese runny. There are only leftovers because I make a double batch. Yum! Great Salad Recipe
    I haven't tried the shrimp salad on this page. The restaurant the woman owns is famous. Los Barrios. She even went to cook for the president.
